LEMONGRASS

~40 lbs Lemongrass aka "Sereh", "Citronella Root", "Xiang-Mao", "香茅" Lemongrass has a long pale yellow-green stalk and a bulbous bottom. It has a citrus and lemon scent, with a hint of mint. Lemongrass works best in dishes like soups and slow-roasted meats that simmer for long periods of time. This is a popular ingredient in Southeast Asian cuisines. Lemongrass is available year-round. Handling Tip Selection Lemongrass is firm with a tight bulb and no dark spots. The top may be dry but has no signs of browning or wilting. Storage Lemongrass should be stored at 38° - 40°F (3°C - 4°C) with a relative humidity of eighty-five to ninety percent and no mist. The typical shelf life is two to three weeks. Lemongrass is not sensitive to ethylene, a naturally occurring gas that regulates ripening. Lemongrass produces a low level of ethylene. Lemongrass is not sensitive to chilling injury.
