Lavender Honey - Honey Royale

The Most Sought-After Honey You’ve Never Found Spain produces lavender honey in small, season-dependent batches. The bloom is brief, a matter of weeks in late spring, and the conditions have to be just right. Too much rain and the nectar dilutes. Too much heat and the flowers close before the bees can do their work. The result, when everything cooperates, is a honey so delicate and difficult to source that most people never encounter the real thing. This is the real thing. What Makes Our Spanish Lavender Honey Special? Honey Royale: Our Spanish Lavender earns its place alongside Tupelo and Sourwood as one of our most prized single-origin honeys — rare enough to treat like a fine wine, and genuinely difficult to source in any quantity. True Monofloral, Fully Traceable: One flower, one season, one honey. No blending, no approximation — our beekeepers work exclusively within the lavender fields during bloom so the sourcing story is clean from hive to jar. A Flavor Worth Paying Attention To: The entry is soft and buttery, with none of the boldness you'd expect from a floral honey. The lavender note is present but composed — a whisper, not a shout. Midway through, a bright lift of lemon zest emerges, clean and citrus-edged. The finish is long, faintly herbaceous, the kind that lingers without demanding anything of you. Minimally Filtered: Handled as little as possible — no high heat, no heavy filtration. Like all of our Royale honeys, we don't compromise what makes it worth sourcing in the first place. Naturally Crystallizes: As with most minimally filtered honeys, Spanish Lavender may crystallize over time. This is a sign of quality, not spoilage — and the flavor remains unchanged. Star K Kosher Certified: Thoughtfully prepared to meet kosher standards. This is not a honey you reach for without thinking — order yours before the season's allocation is gone. How to Use Drizzle over a ripe wedge of Manchego or a triple-cream brie and let the floral notes lift the fat. Stir a small spoonful into Earl Grey or chamomile, where the lemon notes meet the bergamot halfway. Use as a glaze on roasted stone fruit — peaches, plums, apricots — and finish with flaked sea salt. Or pour a small amount into a shallow dish, set out good bread, and let it speak for itself.
