Last Light Half Caff

Last Light Half Caff from Wonderstate Coffee is a rare achievement: a half-caffeine blend that tastes like full-strength specialty coffee. Blending washed Honduran beans from San Fernando Cooperative with natural-process Ethiopian coffee from Worka Chelbessa, this roast delivers complexity without keeping you up at night. The result is a dreamy cup that opens with bright berry notes, transitions into the nutty sweetness of marzipan, and finishes with rich dark chocolate. It's the coffee you reach for when you want the ritual and flavor of a proper brew, but the day is winding down. Tasting NotesBerry-forward and juicy on the front, with a medium body that carries almond-like marzipan sweetness through the middle. The finish is smooth and chocolatey, lingering without heaviness. The acidity is balanced and fruit-toned rather than sharp—think ripe blackberry more than citrus. Clean, sweet, and surprisingly layered for a half-caff. Brew MethodsLast Light shines as espresso, where the berry and chocolate notes create a balanced, slightly fruited shot that pairs beautifully with milk drinks. It's equally excellent as pour over or drip, where the marzipan sweetness opens up and the berry notes become more pronounced. French press brings out the body and chocolate finish. This is a versatile roast that adapts well to any method—choose based on how much texture you want.
