LalBrew Pomona (Biotransformation IPA)

Biotransformation Powerhouse • Tropical Intensity • Engineered for Modern IPA LalBrew Pomona is a dry ale strain selected specifically for hop biotransformation, prized for its ability to convert hop compounds into intense tropical fruit aromatics during fermentation. Where most yeasts simply tolerate heavy dry hopping, Pomona actively participates — unlocking guava, passionfruit, and citrus notes that weren't there before. With 80% attenuation and medium flocculation, it finishes dry enough to keep big IPAs drinkable while holding the gentle suspension that supports a soft, modern presentation. Flavor & Aroma Profile Powerful biotransformation of hop compounds into tropical aromatics Guava, passionfruit, and ripe citrus notes Fruity ester profile that layers seamlessly with modern hops Soft, juicy palate with moderate haze Amplified aroma intensity from fermentation dry hops Fermented cooler, Pomona delivers a controlled fruit profile with bright hop expression; at the warm end of its range, biotransformation accelerates and the tropical character becomes the headline of the beer. Brewing ApplicationsLalBrew Pomona is a staple ingredient in many modern hop-forward styles, including: Hazy IPA West Coast IPA Double IPA Cold IPA Hoppy Pale Ale Thiol-Driven IPA It is also a smart pick anywhere a brewer wants maximum aroma return from an expensive hop bill. Usage RecommendationsPitch one 11 g sachet into 5 gallons of standard-gravity wort, fermenting at 64–73°F. The cooler end gives a cleaner, more West Coast read on the style, while warmer fermentations maximize ester and biotransformation intensity. To put Pomona to work, dry hop during active fermentation — day two or three — with thiol-rich and survivable hops like Citra, Mosaic, and Nelson Sauvin, then add a second charge post-fermentation for layered aroma.
