LalBrew NovaLager (Hybrid Lager)

True Lager Character at Ale Temperatures • Ultra-Low Sulfur • Next-Generation Lager Brewing LalBrew NovaLager is a genuinely new kind of lager yeast from Lallemand: a true bottom-fermenting Saccharomyces pastorianus hybrid from a novel Group III lineage, bred by classical non-GMO methods rather than selected from existing lager strains. It produces clean, crisp, authentic lager beer across an unusually wide temperature range, including warm ale-territory fermentations. It exists to remove the two classic lager headaches: temperature control and sulfur cleanup. With 78 to 84% attenuation and medium flocculation, NovaLager finishes dry and refreshing, and it uses patented UC Davis technology that inhibits hydrogen sulfide production, so the long conditioning normally needed to clean up a lager largely goes away. Flavor & Aroma Profile Clean, crisp, true lager character No hydrogen sulfide, so no rotten-egg phase Low diacetyl, even without an extended rest Low to medium esters across the temperature range Refreshing dry finish that suits classic and hoppy lagers Fermented cold it behaves like a traditional lager strain with faster conditioning. Fermented warm, up into the high 60s °F, it stays remarkably lager-like, which makes honest lager possible without dedicated temperature control. Brewing Applications NovaLager suits modern and traditional lager styles, including: Munich Helles German Pilsner Classic American Pilsner Vienna Lager Oktoberfest and Marzen Cold IPA and India Pale Lager Lallemand also lists it for New England IPA and pale ale, where its clean profile lets hop character sit out front. Usage Recommendations Pitch one 11 g sachet into 5 gallons of standard-gravity wort. For gravities above about 1.060, or for a cold fermentation in the low 50s °F, pitch two. It can be sprinkled dry onto the wort or rehydrated first. Its working range is 50 to 68 °F. Toward the bottom you get the crispest, most traditional result; toward the top you trade a little of that for a fermentation that finishes in days rather than weeks. Alcohol tolerance is 13% ABV.
