Flavor & Aroma Profile Clean, authentic lager fermentation character Crisp finish with gentle malt balance Very low ester and sulfur production for a dry strain Smooth, rounded drinkability Transparent backdrop for malt and noble hops Fermented at proper lager temperatures, Diamond is precise and classically clean; at the upper end of its range it ferments faster while remaining notably composed, making it forgiving for brewers still dialing in temperature control. Brewing ApplicationsLalBrew Diamond is a staple ingredient in many classic lager styles, including: German Pilsner Helles Vienna Lager Märzen / Oktoberfest Munich Dunkel American Lager It is also well suited to hoppy modern lagers, where its clean profile keeps the hops in sharp focus. Usage RecommendationsPitch two 11 g sachets into 5 gallons of lager-strength wort to hit a healthy cold-pitch cell count, fermenting at 50–59°F. Colder fermentation maximizes crispness and authenticity; the warmer end shortens the schedule with only a slight softening of precision. Give Diamond a diacetyl rest as gravity nears terminal, then lager near freezing for two or more weeks — its high flocculation rewards the patience with sparkling clarity.
