LalBrew BRY-97 (West Coast Ale)

Classic West Coast Character • Fuller Malt Body • Brilliantly Clear Beer LalBrew BRY-97 is an American West Coast ale strain prized for clean fermentation with a slightly fuller body than other American yeasts, plus a knack for accentuating hop character. Drawn from the Siebel Institute culture collection, it has long been a brewery favorite for pale ales and IPAs that drink smooth yet finish bright. With 80% attenuation and high flocculation, BRY-97 ferments thoroughly and then drops out of suspension decisively, producing clear beer with minimal conditioning time. Flavor & Aroma Profile Clean, neutral American fermentation profile Slightly fuller, rounder malt presence than US-05 Accentuates hop flavor and aroma Low ester production with a faint stone-fruit hint Smooth, balanced finish At cooler temperatures BRY-97 is crisp and transparent; warmer fermentations bring a gentle fruitiness while preserving its hop-friendly character. Note that it can start slowly — give it 24–48 hours before worrying. Brewing ApplicationsLalBrew BRY-97 is a staple ingredient in many American ale styles, including: West Coast IPA American Pale Ale American Amber Ale American Brown Ale American Stout American Barleywine It is also an excellent house strain for brewers who want clear, polished beer without filtering or finings. Usage RecommendationsPitch one 11 g sachet into 5 gallons of standard-gravity wort, fermenting at 59–72°F. Cooler fermentations maximize crispness and clarity, while the warm end speeds things along and adds a soft fruity note. Its high flocculation pairs beautifully with classic citrus and pine hops like Cascade, Centennial, and Chinook — the beer falls bright, and the hops stay vivid.
