~30 - 35 lbs KY Bean aka "Flat Bean", "Bian-Dou", "扁豆" KY bean looks like a flat string bean or short greasy bean with light green color and flat pods. It is generally seven to ten inches in length. KY bean is tender and tastes similar to string beans. KY bean is usually sauteed with garlic, black pepper, and olive oil. Handling Tip Selection KY bean should feel firm to the touch, straight with no swelling and dark spots. Storage KY bean should be stored at 40°F - 45°F (4.5°C - 7°C) with a relative humidity of ninety to ninety-five percent and no mist. The typical shelf life is seven to ten days. KY bean is sensitive to ethylene, a naturally occurring gas that regulates ripening. KY beans should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing. KY bean produces a low level of ethylene. KY bean is sensitive to chilling injury at storage below 32°F (0°C). Symptoms include brown spots and water-soaked spots.
