8oz of Pure and Raw Knotweed Honey from Massachusetts. Knotweed plants, also known locally as Bamboo are an invasive species here in the North East, however they bloom in abundance and allow the bees to feast. The bees create a honey that is dark and rich with a robust flavor. Knotweed honey has a rich molasses, butterscotch flavor that can be used on cheese boards, the breakfast table, baking or savory cooking. Suggested Use: drizzle on sharp cheddar cheeses, over waffles, glaze on salmon or baking dark breads and oatcakes. BEE SMART: Japanese Knotweed plants are often called Bamboo because the stems are hollow and segmented, but it is actually a member of the Buckwheat plant family. Many of us here in the Northeast cut down the hollow stems in the winter and tie them together to make homes for Mason Bees.
