Jet Pilot

This Tiki cocktail stays close to its predecessor (Test Pilot), but turns up the volume with Spiced Honey syrup, adding warm spice while taking over the sweetening duties from Cointreau, which gets left behind entirely. Grapefruit Fleur de Sel joins the Lime Leaf Tonic for a sharper, more layered citrus profile, and the rum strategy is pure Donn Beach: don’t pick one when three can do the job better. Two overproof rums bring the fire, while a gentler gold rum keeps the whole thing from becoming delicious aviation fuel.   1 oz overproof Jamaican rum 3/4 oz overproof demerara rum  3/4 oz gold rum 3/4 oz Grapefruit Fleur de Sel 3/4 ounce Lime Leaf Tonic 1/2 oz Spiced Honey 1 dash absinthe 1 dash Angostura bitters Garnish: maraschino cherry    Add all ingredients into a blender with a cup of crushed ice and blend on high until combined but not smooth, about 5 seconds. Pour into a double old fashioned glass. Garnish as desired.
