Note the increasingly earthy flavors as you approach the rind, where the wheel takes on the most characteristics from its aging environment. Best when savored and thoughtfully considered, extra-aged Invierno goes perfectly with fernet, Madeira, or other fortified wines. Very few producers in the United States are making anything like this, so it's a cheese experience you just have to have!
