Idaho 7

Tropical Meets Pine • Apricot and Black Tea Complexity • Modern IPA Heavyweight Idaho 7 is a bold American hop discovered in southern Idaho, prized for an unusual layered profile that stacks juicy apricot and tropical fruit over resinous pine and an intriguing black tea earthiness. That complexity makes it one of the most interesting hops in the modern IPA toolkit — fruity enough for hazies, structured enough for West Coast styles. With a strong alpha acid content of 13%, Idaho 7 is fully dual-purpose, delivering efficient, clean bitterness early while saving its signature fruit-and-resin aromatics for whirlpool and dry hop additions. Flavor & Aroma Profile Juicy apricot and stone fruit Tropical pineapple and papaya Sweet orange citrus Resinous pine backbone Earthy black tea undertone Used moderately it brings fruity depth with a dry, structured finish. At high late-addition rates it turns intensely tropical while that pine-and-tea base keeps the beer from reading one-dimensional. Brewing ApplicationsIdaho 7 is a staple ingredient in many modern hop-forward styles, including: Hazy / New England IPA American IPA Double IPA American Pale Ale Cold IPA Hoppy Red Ale It also adds welcome complexity to single-hop showcases and balances sweeter fruit-candy varieties in blends. Usage RecommendationsFor a 5 gallon batch, use 0.25–0.5 oz at 60 minutes for bittering, then load 1–2 oz into the whirlpool and 1–2 oz into the dry hop. Lower rates give a fruity pale ale with structure; higher rates build the dense apricot-tropical character that headlines modern IPAs. Idaho 7 pairs exceptionally well with Citra and Mosaic, and a biotransformation-friendly yeast like Pomona pushes its stone fruit even further.
