Quality you can taste: Each coffee scores above 86 SCA points, highlighting clean processing and careful roasting. Versatile brewing: Ideal for pour-over, drip, and traditional coffee makers; the Honey lot also rewards adventurous home baristas on espresso. Traceable origins: Showcase specific farms and regions in Brazil, celebrating craftsmanship from soil to cup. Elevated everyday ritual: From weekday mugs to weekend tastings, experience nuanced flavor in every brew. Brewing Guidance for Peak Flavor To highlight sweetness, clarity, and balance, start with fresh, filtered water and a 1:15–1:16 ratio of coffee to water. Adjust grind and dose based on your method and taste. Pour-over (V60/Chemex): 1:16 ratio, 200°F water. The Honey lot sings here-raspberry and honey pop with a silky finish. Aim for a medium grind and a 2.5–3.5 minute total brew time. Drip/traditional coffee maker: 1:15–1:17 ratio. The Premium Blend delivers a plush, chocolate-caramel cup with gentle acidity and a clean finish. French press: 1:15 ratio, coarse grind, 4 minutes steep, gentle plunge. Expect a deeper body and amplified cocoa and molasses sweetness. Espresso: For experienced home baristas, begin around a 1:2 brew ratio (e.g., 18g in, 36g out in 28–32 seconds). The Honey lot offers a syrupy shot with red-fruit lift; the Premium Blend leans into milk chocolate and caramel. Tip: If you purchase ground, select a medium grind for filter methods. If you grind at home, adjust finer for shorter brew times and coarser for longer extractions to keep acidity rounded and sweetness prominent. Sourcing, Craft, and Sustainability This kit underscores Brazil’s extraordinary diversity in specialty coffee, from Espírito Santo’s high-grown Yellow Caturra to the storied slopes of Mantiqueira de Minas. The Honey process retains mucilage during drying to amplify sweetness and texture, often using less water than fully washed methods, while carefully managed fermented and natural processes develop complexity and a lush mouthfeel. Working directly with named producers ensures traceability and honors the stewardship behind each harvest-selective picking, patient drying, and meticulous quality control to achieve SCA scores above 86. Flavor Journey, From First Aroma to Final Sip Open the Honey Roasted coffee and breathe in notes of cane molasses and raw honey, followed by a sweet, berry-like lift. In the cup, that sweetness unfurls into a velvety body with a polished, medium acidity that’s rounded and gentle. The Premium Blend greets you with chocolate and cocoa on the nose, then layers in red fruits, caramel, and apple pie warmth. Together, the two coffees create a tasting arc-from bright and elegant to comforting and indulgent-so you can match your brew to the moment.
