High Wire Jimmy Red Bottled In Bond Straight Bourbon Whiskey

High Wire Jimmy Red Bottled in Bond 6B is a rare gem crafted from 100% Jimmy Red corn—an heirloom variety once down to just two ears, now revived by High Wire Distilling across hundreds of acres for its exceptionally oily distillate and bold flavors. Aged at least four years in 53-gallon barrels and bottled at 100 proof to meet Bottled-in-Bond standards, it bursts with tart cherry, dark chocolate, leather, coffee bean, baking spice, and smoky vanilla, delivering a thick, creamy mouthfeel that's both complex and conversation-worthy. Bourbon enthusiasts crave it for its historic revival story, limited release, and pure corn-driven depth that stands out in a sea of ordinary whiskeys. High Wire Distilling Co., founded by husband and wife team Scott Blackwell and Ann Marshall and based in Charleston, South Carolina, creates this straight bourbon whiskey using an exceptionally rare 100% Jimmy Red corn mashbill. The bourbon is aged a minimum of 4 years in 53-gallon barrels and bottled at 100 proof, meeting all federal bottled-in-bond requirements for authenticity and quality. The nose opens with inviting aromas of tart cherry and dark chocolate, layered with subtle hints of coffee bean, baking spice, and smoky vanilla, finishing with a delicate note of ground cinnamon. On the palate, white peppercorn spice and corn syrup lead the way, followed by light yellow cake and subtle notes of chalky vanilla, tangerine, and fruit punch, with a thin, oily mouthfeel that carries these flavors smoothly across the tongue. The finish tapers gently with straightforward flavors—corn syrup, white peppercorn spice, and oak—rounded out by a light touch of vanilla, creating a brief but memorable conclusion. Jimmy Red corn is a heritage varietal that nearly disappeared entirely, with only two known ears remaining at one point. High Wire Distilling played a crucial role in reviving this grain, now growing hundreds of acres annually, making this bourbon a remarkable achievement in both flavor and agricultural preservation. The use of unmalted corn in a bourbon is extraordinarily rare, resulting in a flavor profile that stands apart from traditional bourbon conventions. This bourbon is best enjoyed neat in a proper whiskey glass or with perhaps one cube of ice to fully appreciate its complex and nuanced flavor profile. At $79.99 per 750ml bottle, it represents a premium craft offering that rewards exploration and appreciation of its singular grain story.
