High Lawn Blue

Jersey milk makes a truly incredible blue. Creamy, pudgy, and perfectly salty, High Lawn Blue is sweet and balanced, just like the farm’s joyful herd. A natural rind brings a bit of earthiness to these little 2 lb wheels, giving us a little more of the taste of the Berkshires.  All of High Lawn’s cheeses are unique expressions of their pure Jersey milk. After farming Jersey cows for over 100 years, High Lawn understands the Jersey breed like few other farms do. Jersey milk has higher levels of vitamins, minerals, and protein than other breeds, giving cheeses made with it a complex, sweet flavor. These small cows also use less land and resources than other breeds, making High Lawn’s operation that much more sustainable.
