Heirloom Tomatoes for Sauce

***Products Only Ship On Mondays of Each Week*** Inspired by a summer collaboration with Chef Rocco DiSpirito, this box celebrates the very best tomatoes for cooking down into rich, velvety sauces. Each variety was chosen for its dense flesh, low water content, and concentrated sweetness—qualities that let flavors shine without long reduction times. From Italy’s most beloved sauce tomatoes to rare heirlooms, this mix delivers everything you need for a pot of unforgettable sauce. Canestrino di Lucca – A Tuscan heirloom shaped like a small basket (its name means “little basket of Lucca”). Thick-walled and meaty, with very few seeds, it cooks down into a naturally sweet, dense sauce with almost no need for extra seasoning. Speckled Roman – A striking elongated tomato with red and golden streaks. Meaty and low in moisture, it’s both beautiful and practical. Known for its balanced acidity, it brings brightness and body to long-simmered sauces. Piennolo del Vesuvio – A Neapolitan treasure, traditionally hung in clusters to dry for winter use. Small, teardrop-shaped, and bursting with concentrated flavor—sweet, tangy, and slightly smoky. They lend depth and intensity to sauces without overpowering. San Marzano – The classic Italian plum tomato, prized by chefs around the world. Firm flesh, minimal seeds, and a perfect balance of sweetness and acidity make it the gold standard for silky, robust tomato sauces. We ship every Monday & Wednesday.
