Cracker "Midds", 100% Durum (perfect for homemade crackers!)

We only mill our durum (grown here in our fields) every so often because it is a long, intensive process. These 100% durum “middlings” are a bonus of that work! FLAVOR. That’s what this limited batch of Durum middlings (middlings: a coarse sifting of stone-ground wheat) is all about. We grew this golden durum on the family farm this last summer. Today we are stone-milling it into flour (a tricky wheat to mill! “Durum” literally means “hard” in Latin). This wheat originated in Ancient Rome and has been cultivated ever science These “Midds” make exceptional crackers—golden in color, a texture that will blow you away! Recipe included:  (1) 20 ounce bag of stone-milled “middlings” from our crop of durum wheat. Add your sourdough to these for a crispy, air-bubble-filled treat rich in protein & nutrients & FLAVOR. These “midds” or “middlings” are high in protein (18%+), high in fiber, & packed with B vitamins. Add them to recipes such as our “Sourdough Crackers” (stamped on the bag) for a delicious treat from history! (If you need sourdough, check out my personal dehydrated starter 🤠, available elsewhere in the store. Be sure to pick up a bag of White Label “All Purpose Heritage Flour” for the recipe too!)   Stone milled wheat is packed with flavor and nutrient benefits that modern roller mills can’t compete with. Slower to make? Yes. Worth it? 100%  Middlings are packed with flavor and nutrition. Add a scoop of these to recipes for AMAZING crackers & more! Net weight: 20 ounces
