Hatch Red Medium - Joe E. Parker Chile  - Seeds

Hatch Red Medium - Joe E. Parker Chile – (Capsicum annuum) The Joe E. Parker is a classic New Mexico chile developed by the New Mexico Chile Pepper Institute and named for longtime chile researcher Joe E. Parker. This variety is prized for its thick flesh, reliable yields, and balanced medium heat. Plants grow about 30 inches tall and produce heavy sets of tapered pods averaging 6–8 inches long. The thick, meaty walls make these chiles ideal for roasting, stuffing, and peeling, as they hold their shape and texture well. Joe E. Parker chiles can be harvested green for classic Hatch flavor or allowed to ripen red for deeper, richer chile taste with slightly more heat. Scoville levels typically range from 500 to 2,500 SHU, emphasizing flavor over extreme heat. This versatile chile is excellent for roasting, red chile sauce, drying into powder, or making chiles rellenos. A dependable, high-yielding variety, Joe E. Parker remains one of the most popular and widely grown Hatch-style chiles for home gardeners and cooks alike. Heat level: 500 to 2,500 SHU – Mild/Medium. Flavor: Sweet & Rich.
