Hackleback Sturgeon

Native to the rivers and lakes of Illinois and Tennessee, wild Hackleback sturgeon produce small, firm, grains that are black to dark in color. Similar to Caspian Ossetra, our Hackleback caviar has a nutty, sweet, and buttery flavor. Hackleback Sturgeon Caviar has several qualities that make it appealing to many people, though tastes can vary of course! Here are some of the reasons why it's popular: Flavor: Buttery and nutty: Many describe the taste as having a rich, buttery flavor with hints of nuttiness, similar to classic caviars like Osetra and Sevruga. This complex flavor profile appeals to gourmands. Mild and accessible: Compared to some other caviars, Hackleback can be considered milder, making it a good entry point for those new to the experience. Texture: Medium-sized pearls: The eggs are larger than some other caviars, offering a satisfying pop in the mouth. Firm and well-defined: The texture is firm and doesn't break easily, adding to the luxurious feel. Other factors: Sustainability: Hackleback sturgeon is the only commercially fished sturgeon in the US with sustainable regulations in place, appealing to environmentally conscious consumers. Availability and price: Compared to some imported caviars, Hackleback is more readily available and generally more affordable, making it a good value option. American origin: For those who prefer to buy domestic products, Hackleback holds a special appeal as the only American wild caviar. It's important to remember that taste is subjective, and what one person loves another might not. However, the factors listed above contribute to the overall popularity of Hackleback sturgeon caviar.
