Ginger Honey Candy

They Make Me Regret I Am Not a Bee Emily Dickinson envied the bees their flowers, and ginger would have embarrassed her most of all: the plant sends up flame-colored blooms worth any poet’s jealousy. But the interesting part of ginger is the part nobody sees. The leaves live in the light; the flavor lives underground, in a knotted root that carries fire up from the dark. Cooks have prized that fire for thousands of years, from ships’ galleys to gingerbread tins, and it has always kept company with honey; the two have shared kitchen shelves as long as there have been kitchens. In this candy, the honey opens first, and then the ginger arrives: a warm, building heat that is unmistakably the root itself, not a polite imitation of it. Each hexagon-window box holds 3.5 ounces of drops made without corn syrup and without gluten. The box is sustainably made paper you can recycle or compost, and the inner bag is recyclable food-grade plastic. What Makes Our Ginger Honey Candy Special? All natural ginger oil: Real ginger character with genuine warmth, drawn from the root, not a faint gingerale whisper. Honey first, then heat: The flavor arrives in order. Honey opens soft, and the ginger builds behind it, warm and slow. Five simple ingredients: Non-GMO sugar, honey, water, all natural ginger oil, and Non-GMO coconut oil. Nothing else. Gluten-free and corn-syrup-free: Made without gluten or corn syrup. Produced in a facility that handles peanuts and tree nuts. Thoughtful packaging: A sustainably made paper box with a honeycomb window, recyclable or home-compostable when clean and dry. Meet the root that grows in the dark and arrives warm. How to use: Eat them right out of the box. Let a drop dissolve in hot water with a squeeze of lemon for a light ginger-honey sipper, or use one to sweeten a cup of our Beautea tisane. Tuck a box into a travel bag; ginger has been the traveler's candy for centuries. Serve a dish alongside dark chocolate; ginger and cocoa are an old and excellent pairing. Store in a cool, dry place away from sun and humidity.
