Meet the Coffees Black Tucano Premium Blend Roasted Coffee (250 g) Sourced from producers Carlos Henrique & Daniele Alkimin and Marcos Rennó & Andréia Moreira, this specialty coffee blend expresses the elegance of Brazil’s highlands: Mantiqueira de Minas – Santa Rita do Sapucaí and Serra do Paredão – São Sebastião da Bela Vista. Grown at 920–1,200 meters and composed of Yellow Catuaí and Mundo Novo varieties, it combines fermented and natural processes for layered sweetness and a velvety texture. In the cup, expect chocolate at multiple registers-cocoa and milk chocolate-woven with red fruits, caramel, apple pie, raw sugar (rapadura), and nutty undertones. The body is medium to full with medium-low acidity, finishing long, clean, and comforting. With an SCA score above 86, this is your go-to daily luxury: polished enough for slow Sunday pour-over, reliable enough for weekday drip. Best for filter methods and traditional coffee makers, the Premium Blend shines as a V60 or flat-bottom brew at a 1:16 ratio. For a richer profile that emphasizes caramel and nuts, tighten to 1:15. While crafted for filter, it also performs beautifully in stovetop moka pots, delivering a syrupy, chocolate-led cup that will satisfy fans of sweet-leaning “espresso”-style beverages at home. Black Tucano Fruity Roasted Coffee (250 g, Limited Edition) From producer Lima Bassoli at Sítio Bom Destino in Afonso Cláudio, Espírito Santo, this single-origin microlot captures the bright, high-toned character that Brazil’s new wave of specialty coffee is known for. Grown at 850 meters, the Catuaí 81 variety undergoes a carefully monitored fermented process to unlock vivid aromatics and crystalline sweetness. The flavor narrative is unmistakably fruity coffee: strawberry and raspberry up front, lifted by molasses and honey. The roast is medium to preserve clarity and a silky texture, with an SCA score above 89 points. Expect a buoyant, fragrant cup that remains poised and refreshing across multiple brew styles. It’s a standout choice for those who love expressive, fruit-forward coffee without sacrificing balance. Ideal for filter methods and traditional coffee makers, the Fruity shines as a pour-over at 1:16, with water around 92–94°C to keep the berry notes lively. Give it a generous bloom-30 to 45 seconds-to let the aromatics pop. For a slightly juicier cup, try 1:15. If you prefer a softer profile, a Chemex highlights honey and molasses with a tea-like clarity. Craftsmanship You Can Taste Black Tucano Coffee Roasters approaches each lot with care: from selecting traceable, relationship-driven coffees to tailoring roast curves that preserve origin character and sweetness. The Premium Blend harmonizes two Brazilian regions-Mantiqueira de Minas and Serra do Paredão-each contributing structure and nuance, while the Fruity microlot from Espírito Santo showcases the potential of modern Arabica processing. Fermentation is applied with precision, yielding clarity, not funk; sweetness, not heaviness. Behind the flavors are producers who steward their lands with respect-harvesting at peak ripeness, sorting meticulously, and drying carefully to protect quality. This intentional approach supports longevity at origin while ensuring every bag you brew delivers clean, distinctive, and memorable cups. How to Brew for Best Results Grind: Aim for a medium grind for most filter coffee. Adjust finer for more sweetness and body, coarser for increased clarity and acidity. Ratio: Start at 1:16 (e.g., 25 g coffee to 400 g water). For the Premium Blend’s chocolate and caramel, try 1:15; for the Fruity’s berries and honey, 1:16 to 1:17. Water: Use fresh, filtered water at 92–96°C. Slightly cooler water preserves delicate aromatics in the Fruity; slightly hotter accentuates sweetness in the Premium. Bloom: 30–45 seconds with twice the coffee dose in water helps release trapped CO₂ and heightens aroma. Traditional coffee makers: For cloth or drip machines, keep your grind medium and avoid overfilling the basket. Stir once midway to promote even extraction. Serving: Let your coffee rest 1–2 minutes before sipping to allow flavors to open-especially for the Fruity’s berry notes and the Premium’s cocoa depth. The 180 ml Black Tucano Coffee Cup Thoughtfully sized at 180 ml, this cup is ideal for daily brews-ample for a generous pour-over, a silky flat white, or a double-shot-style “espresso” topped with hot water. Its premium-quality material helps maintain ideal beverage temperature while the refined silhouette complements any setting, from your kitchen counter to your work desk.
