The Madera line from Friedr Herder features forged stainless steel blades and one piece wood handles. The lack of a bolster at the heel makes these very easy to sharpen on whetstones. Friedr Herder dates back to the 1700's, and is one of the longest running knife-makers in Solingen, Germany, a town famous for its knife making.
