The nutmeg seeds spend six to eight weeks drying in the sun where they will separate from their hard coatings. These coatings—called the mace—can be used as a spice in their own right. Nutmeg is often used in dishes during the fall months, as its warm and slightly sweet notes practically embody the season. Nutmeg vs. Mace While nutmeg is the inner seed of the nutmeg tree, it grows in close proximity to the mace, or outer coating. Mace can be harvested and used as a spice just as nutmeg can, but the similarities end there. Although these two elements grow very closely, they actually have many differences and cannot be used interchangeably. Red in color when ground, mace is slightly spicier than nutmeg, which has a delicate sweet flavor. Often described as a cross between cinnamon and pepper, mace is rarely used in the same dishes at nutmeg. What Does Nutmeg Taste Like? Reminiscent of clove and tobacco, nutmeg is an intense spice with a distinct flavor and unique aroma. Nutmeg is slightly sweet and mildly spicy, with undertones of earth and warmth. It can even seem slightly spicy for those who are not used to bold flavors. Nutmeg is often paired with other spicy-sweet seasonings like cinnamon and allspice, all of which add a comforting, almost nostalgic flavor to any dish. Whole Nutmeg vs. Ground Nutmeg In addition to this freshly ground nutmeg, the spice can also be bought whole and grated directly into the dish of your choice. While this will give you the freshest, strongest nutmeg flavor, it can be inconvenient for those who like their spices to be ready at a moment's notice. Luckily, this ground nutmeg is made only with premium quality ingredients, so your dishes will taste just as delicious as they would with freshly-grated nutmeg. Cooking with Nutmeg Due to its warm, slightly spicy flavor, nutmeg is the perfect addition to many dishes. The spice is subtle enough to complement the sweetness in a dessert and bold enough to cut through other rich flavors in a savory dish. When using nutmeg in a dish, be sure to add a little at a time and taste your food often, as it's easy to overpower a dish with the intense flavors of the spice.   Popular Nutmeg Dishes While nutmeg is known for its use in spicy autumnal desserts such as pumpkin pie or spice cookies, it is the perfect addition to many other dishes—both sweet and savory. Traditionally, nutmeg was an important ingredient in creamed spinach, and remains an essential part of a béchamel sauce. Nutmeg holds up well against other strong flavors, so it's great for use when cooking things like squash, sweet potatoes, and red meats. You can even sprinkle it over your coffee for a spicy finishing touch. How to Store Ground Nutmeg Store your ground nutmeg in an air-tight container where it can be protected against heat, light, and moisture. A cupboard or pantry is preferable to a space on your countertop, as the nutmeg will maintain its freshness for as long as possible. Properly stored, nutmeg can stay fresh for years at a time, but with the quality and flavor of this premium ground nutmeg, you'll likely run out before very long. An earthy, nutty spice, nutmeg is the perfect addition to your pantry.
