Green tea is called Sejak for the smallest leaves, Jungjak for the middle leaves, and Daejak for the largest leaves, depending on the size of the tea leaves. Sejak has more natural fragrance than Jungjak and Daejak and is characterized by its soft taste. Sejak, a traditional Korean tea made from sprouts picked between Gokwoo, which signals the start of the farming season, and Ipha, which marks the beginning of summer, is also called Jakseolcha because the tea leaves resemble a sparrow's tongue. Sejak has an excellent fragrant aroma and a savory and bitter taste, and the tea water has a clear green color. Sejak helps excrete cholesterol and prevents cholesterol from accumulating in the blood vessels, and is rich in iron, potassium, and minerals, so much so that it can be called a natural vitamin. Polyphenols contained in green tea suppress active oxygen, prevent inflammation, and protect cells to prevent aging. Green tea contains six times more polyphenols than black tea, and EGCG is said to have 20 times the antioxidant effect of vitamin C. Drinking more than five cups of green tea a day helps prevent high blood pressure, diabetes, stroke, and heart hypertrophy, and prevents fat from accumulating in the arteries.
