Capon are castrated male chickens. They grow big and juicy (9-10 lbs!) with a high percentage of white meat (bigger breasts, smaller legs). We source our capon through D’Artagnan’s - These capons and are humanely raised on small family farms, where they are fed an all-vegetarian diet of wholesome grains and fresh, pure spring water. Both are unique and delicious alternatives to turkey for the holidays. The young birds, raised just 12-14 weeks, are tender and succulent with delicately textured white meat. The birds are grown out slowly and naturally – no hormones or steroids are ever used – for a full, rich flavor. Raised humanely on a small Midwest family farm that supports sustainable agriculture and preserving the natural ecosystem. Chickens are caponized at a young age with traditional surgical methods rather than the chemical castration more common in factory farms.
