Foro Dry Vermouth

Foro Dry Vermouth is an Italian dry vermouth made from organic Trebbiano grapes in Piemonte, bottled at 17.5% ABV (750ml). Produced by the Terre dei Solari winery, this expression distinguishes itself through a meticulous cold-infusion process in which each botanical is individually macerated over six months before blending — a labor-intensive method that preserves delicate aromatic compounds most industrial vermouths sacrifice. Quick Facts: ABV: 17.5%  |  Origin: Piemonte, Italy  |  Style: Dry Vermouth  |  Producer: Terre dei Solari Production & Heritage Terre dei Solari produces Foro Dry Vermouth in Piemonte, the historic heartland of Italian vermouth production. The base wine is made from certified organic Trebbiano grapes, lending a clean, neutral canvas for the botanical profile. What sets this expression apart from most dry vermouths — and from Foro's own Rosso bottling — is the complete absence of heat during production. Each botanical, including Roman wormwood, lemon peel, rosehip, thyme, aloe vera, gentian, Chinese tree bark, and St. John's wort, undergoes individual cold infusion over a six-month period. No additives are used at any stage, and the botanicals are blended only after each has been separately extracted, allowing the winemaker precise control over the aromatic balance. Tasting Notes Aroma: The nose opens with pronounced floral notes — think alpine wildflowers and chamomile — before moving into bright lemon peel and dried rosehip. A subtle herbal undercurrent of thyme and gentian root adds aromatic complexity without heaviness. Taste: The palate enters with a dry white wine character courtesy of the Trebbiano base, then builds through layers of dried herbs and delicate citrus at the mid-palate. An intriguing saline note emerges alongside an almost effervescent textural quality that gives the liquid unexpected lift and energy. The overall impression is lean and elegant rather than bitter or syrupy. Finish: The finish is medium in length, clean, and refreshingly dry with lingering traces of lemon zest and alpine botanicals. A faint mineral quality carries through to the very end, reinforcing the wine-forward structure. How to Drink Foro Dry Chilled and neat, Foro Dry works beautifully as an aperitivo — its low ABV and bright aromatics make it a natural stand-alone sipper before dinner. For mixing, its fragrant, herb-forward character integrates seamlessly into classic cocktails. Classic Dry Martini: The pronounced floral and herbal notes hold their own against gin without being overwhelmed, adding genuine complexity rather than mere dilution. Bamboo Cocktail: Paired with dry sherry, Foro's saline quality and botanical depth create an elegant, low-proof cocktail with serious depth. Reverse Manhattan: Used as the dominant ingredient with a smaller measure of rye whiskey and a dash of bitters, the vermouth's alpine floral character takes center stage. Foro Dry Vermouth delivers a lean, wine-forward palate of dried herbs, lemon peel, and alpine flowers with a distinctive saline edge and an almost effervescent mouthfeel. It is notably delicate and elegant rather than bitter or heavy. How does Foro Dry compare to Dolin Dry Vermouth? Dolin Dry, produced in Chambéry, France, tends toward a more restrained, minerally profile with softer herbal notes, while Foro Dry leans into richer floral aromatics and a more pronounced saline, textural quality from its six-month individual botanical infusions. Both are premium dry vermouths, but Foro's organic Trebbiano base and cold-process extraction give it a distinctly Italian, wine-driven character. Is Foro Dry good for Martinis? Foro Dry is an excellent Martini vermouth — its fragrant floral and herbal profile adds real complexity to both gin- and vodka-based Martinis, and its clean finish prevents the cocktail from becoming muddled or cloying. Where is Foro Dry made? Foro Dry Vermouth is produced by the Terre dei Solari winery in Piemonte, northwestern Italy — the region historically recognized as the birthplace of vermouth. What foods pair well with Foro Dry? Briny green olives and marinated artichoke hearts complement the vermouth's saline note. Fresh oysters echo its mineral quality. Light seafood dishes such as shrimp crudo or ceviche work well with the citrus and herbal character. Aged cheeses like Parmigiano-Reggiano provide a rich counterpoint to the dry, floral finish. What sizes does Foro Dry come in? Foro Dry Vermouth is available in the standard 750ml bottle format. Is Foro Dry worth the price? Foro Dry positions as a premium dry vermouth, and its six-month individual botanical infusion process, organic base wine, and additive-free production justify its placement above mass-produced alternatives. For anyone serious about the quality of their Martini or aperitivo pour, it represents strong value within the artisan vermouth tier. Why Foro Dry? The cold-infusion production method — where each botanical is macerated individually over six months without heat — is genuinely uncommon in the vermouth category and results in a cleaner, more defined aromatic profile than most competitors achieve. The certified organic Trebbiano base provides an honest wine backbone that many commercial vermouths lack entirely, and the absence of any additives means the flavor comes entirely from the grapes and botanicals. Within the growing field of artisan vermouths, Foro Dry earns its reputation by committing fully to a process that prioritizes transparency and botanical precision over speed and volume.
