This kelp contains more mannitol, which is a natural sugar molecule that gives this kelp a slightly sweeter taste. Finger kelp (Digitata) has been considered a health food in Asia, and contains the highest amount of iodine which is needed for the natural development cycle. Broths and soup stocks are often enhanced by the natural flavor. Kelp provides a low sodium replacement for salt on pop-corn.
