Flaked Wheat

Stable Haze and Soft Body • Raw Wheat Character • The Hazy Beer Essential Flaked Wheat is raw, unmalted wheat that has been steamed and rolled flat, prized for the dense, stable haze and soft, cushioned body it brings to beer. Because it skips the malting process, it keeps more of wheat's native protein — exactly what hazy IPAs, witbiers, and tart wheat beers rely on for their opaque looks and silky texture. With an extract potential of 34 PPG and a color of just 1 °Lovibond, Flaked Wheat adds gravity with virtually no color, keeping pale beers pale while transforming their appearance and mouthfeel. Pre-gelatinized flakes go straight into the mash with no cereal cooking required. Flavor & Aroma Profile Light, raw bready wheat flavor Soft, slightly doughy character Plush, cushioned body Dense, persistent haze Improved foam stability and cling Small additions subtly soften body and boost foam; larger additions build the milky opacity and full, smooth texture that define modern hazy styles and traditional Belgian wits. Brewing ApplicationsFlaked Wheat is a staple ingredient in many hazy and wheat-driven beer styles, including: New England IPA Witbier Berliner Weisse Gose Saison Lambic-inspired Sours It is also handy at low rates in any beer that needs better head retention and a rounder mouthfeel without added flavor or color. Usage RecommendationsFlaked Wheat is typically used at 5–40% of the grain bill. Lower percentages improve foam and add gentle softness, while rates of 20–40% deliver the full haze, body, and raw-wheat character of witbiers and hazy IPAs. Since it has no enzymes, mash it with a base malt that can handle the conversion. For maximum haze, pair it with flaked oats and a low-flocculation hazy yeast, then dry hop generously — the proteins and hop polyphenols do the rest.
