Finca Los Nogales

Colombia Finca Los Nogales Roast: Medium Process: Fermentation Washed Tasting Notes: Strawberry Candy, Plum, Lychee, Chocolate Mousse, Pomegranate Brew Method: Filter, Cold Brew, AeroPress Origin: Colombia From the lush mountains of San Agustín, Huila, comes a coffee with heart, heritage, and exceptional flavor. Finca Los Nogales is more than just a farm—it’s the story of the Hernandez family’s resilience and dedication. After the tragic loss of their father to armed conflict, the family came together to honor his legacy through coffee. Today, their Caturra varietal—named after Oscar’s sister, Lucia—delivers a bright, fruity cup with lively acidity and a smooth, balanced finish. But what truly sets this coffee apart is the passion behind it. The Hernandez family blends time-honored farming traditions with modern innovation and a strong commitment to sustainability. Every bean reflects their 'waste nothing' philosophy, from careful water use during processing to turning organic waste into natural fertilizer. The coffee beans from the Los Nogales farm undergo extended fermentation to develop complex flavors, often with unique processing methods like lactic fermentation or a sourdough-like starter. The fermentation process is a key part of producing these distinct coffees, with variations in length from around 72 to 190 hours, leading to flavor profiles that can include buttery, creamy, and fruit-forward notes.  Whether you're sipping at sunrise or brewing a thoughtful cup for friends, Finca Los Nogales brings you a coffee that’s as meaningful as it is delicious.
