Guji is a zone in the Oromia Region of southern Ethiopia. Fertile, red-brown soil and Cordia Africana and Acacia Ensete ventricosum trees provide ample shade, benefiting the coffee plants grown by the many smallholder farmers. Coffee cherries are sorted to remove less dense fruit prior to processing. The cherries are then moved to raised beds where they are dried for ~18 days. Like many of the country’s coffee growing regions, the culture of the Guji Zone varies and speaks to the diversity of people who cultivate coffee.
