Ethiopia Dogo Sodu

ETHIOPIA - DOGO SODU (DRY PROCESS) Ethiopian coffee gets a lot of hype. This one earns it. From the Dogo Sodu washing station in Sidamo, this dry-processed coffee delivers the fruit-forward character Ethiopia is known for, but with more complexity and control than you'd expect. The aromatics alone are worth the price: jasmine florals, dried stone fruit, and a distinctive tenadam herb note that adds an almost tea-like fragrance. Roast to medium, the profile shifts from bright fruit salad to something richer and more layered. Think blueberry pie filling and plum jam rather than fresh berries. The jammy sweetness is pronounced but not overwhelming, balanced by subtle bittersweetness and those remarkable floral aromatics that linger in the finish. Why Dry Process Matters: The cherries are dried intact with the fruit still attached to the bean, concentrating sugars and creating those deep, jammy flavors. It's a riskier process and requires perfect weather and careful monitoring. But when done right, produces some of the most distinctive coffee in the world. Roast Level: Medium Tasting Notes: Blueberry, plum jam, dried peach, jasmine, tenadam herb Brewing Recommendation: Shines in pour-over where the complex aromatics can fully develop. The floral notes and fruit character create a sensory experience beyond just taste. You'll smell this coffee before you drink it. Fair Warning: If you prefer straightforward, uncomplicated coffee, start with our Honduras or Brazil. This Ethiopian is expressive, aromatic, and unabashedly itself.
