Our heat and serve Enchilada Mole is a classic “coloradito” sauce, crafted with authentic ingredients like heirloom corn, smoked chiles, tomatoes, seeds, and spices. This slightly-sweet sauce is more subtle than Mole Negro and less spicy than Mole Rojo. It's a crowd pleaser and can be used to make no-bake Oaxacan enmoladas—enchiladas made with mole—by lightly frying corn tortillas, folding them around shredded chicken or cheese, and generously coating them in warm mole.
