Production Notes Empirical Stonefruit undergoes meticulous production procedures to capture the sweetness and juiciness of stone fruits. Quality ripe fruits are harvested and subject to fermentation under controlled conditions, preserving their natural flavours. The mixed fruit mash is then distilled in a traditional copper still to concentrate the essence and achieve a high degree of alcohol purity. The spirit is then aged in oak barrels, allowing it to imbibe the wood's characteristics which add complexity and depth to the final product. After maturing, the liqueur is infused with natural stone fruit extracts before bottling, ensuring that every drop delivers an unmistakable stone fruit flavour.
