Daybreak + Daybreak Blackseed

Daybreak is a fresh basket cheese with a springy body, gentle tang, and light salinity that builds as you eat. High moisture and rindless, it offers clean cultured dairy notes and a texture that softens on the palate while retaining enough structure for snacking, salads, or melting to a gorgeous elastic pull. A modern American interpretation of an ancient Eastern Mediterranean mountain basket cheesemaking tradition, Daybreak is made in Philadelphia from local grass-fed milk. The Blackseed version is studded with nigella seeds, for a pleasant crunch and savory notes of onion and thyme that complement the cheese's fresh acidity and milky character in keeping with that Eastern Mediterranean tradition. Nigella (Nigella sativa), also known as blackseed or black cumin, is a familiar staple in cheeses, breads, pastries, salads, and savory dishes throughout the Balkans, Eastern Mediterranean, Caucasus, and Middle East. 90 Day shelf life in vacuum bag. 2 weeks after cutting and wrapping. 6 labels provided with each wheel. Wheel size is 1.5 lbs.
