Production Notes The making of Dassai's sake is a craft honed to perfection over centuries. They use the labor-intensive method of Daiginjo brewing, involving polishing each grain of rice to 50% or less of its original size, which helps the sake achieve its distinctive clarity and sophistication. The fermentation process relies on the age-old practice of Kimoto to ensure the yeast ferments at a slow and steady pace. This method imparts an added depth and complexity to the sake, resulting in a multifaceted character. Focused on the present while respecting the past, Dassai uses a blend of traditional techniques and innovative technology in their brewing process. The result is a sake that not only engraves an indelible print of the Japanese brewing culture on the world but also continues to shape its future. 375ml & 28 Proof
