Crystal 40 - Briess

True Caramel Character • Amber Color and Balance • The All-Purpose Crystal Malt Crystal 40 is the most widely used crystal malt in American brewing, prized for its true caramel flavor, light toffee sweetness, and the warm amber color it brings to pale ales and amber ales alike. Stewed to convert starches into caramelized sugars, it adds sweetness, body, and foam that carry straight through fermentation. With an extract potential of 34 PPG and a color of 40 °Lovibond, Crystal 40 is the classic middle-weight caramel malt — assertive enough to define an amber ale, restrained enough to balance an IPA without muddying the hops. Flavor & Aroma Profile Smooth, distinct caramel flavor Light toffee and caramelized sugar notes Pleasant rounded sweetness Warm amber color contribution Fuller body and improved head retention A small addition lends balance and a copper glint to hoppy beers; larger additions move the beer firmly into amber territory with a rich, sweet caramel core that defines the style. Brewing ApplicationsCrystal 40 is a staple ingredient in many classic American and English beer styles, including: Amber Ale American Pale Ale American IPA ESB Brown Ale California Common It is also the standard answer when a recipe simply needs more malt presence, color, and body in one ingredient. Usage RecommendationsCrystal 40 is typically used at 5–15% of the grain bill. Around 5% adds balance and color to hop-forward styles, while 10–15% builds the caramel-rich, amber-hued backbone of classic amber and ESB recipes. Pair it with citrusy American hops for the timeless amber ale combination, or blend it with Crystal 120 to add dark-fruit depth beneath the caramel.
