Clairin Le Rocher 2022 Harvest Haitian Rum 750ml

Bethel Romelus is a devoutly religious man, and when he built his small distillery in the village of Pignon in Haiti's Nord region, he built it — quite literally — on a rock. He named it Le Rocher in direct reference to the Gospel of Matthew: "the foolish man builds his house on the sand, and the wise man builds it on the rock." It's a fitting name for a rhum that has, in the years since its 2017 launch, become one of the most respected and most sought-after expressions in the entire Clairin category — a genuinely uncompromising, wholly artisanal Haitian spirit that stands apart from virtually everything else on the shelf. Le Rocher begins with cane syrup made from the Cristalline variety, grown without chemicals in Saint Michel de l'Attalaye and brought to the distillery, where it's diluted to precisely the right brix level for completely natural, wild fermentation — no commercial yeast, no shortcuts, just the ambient microflora of Pignon itself doing the work. During the unusually long fermentation, dunder — the residue left over from the previous batch's distillation — is added back into the must, a traditional technique closely related to the "Grand Arôme" method that dramatically boosts the intensity and complexity of the finished spirit. The result is distilled entirely in a small, artisanal copper pot still, unfiltered, and bottled without dilution to any standard commercial proof — the 2022 harvest landed at a genuinely potent 50.39% ABV, a number that reflects exactly what nature and Romelus's process produced that year, rather than any adjusted, standardized target. The tasting notes for this rhum are, by every account, an experience rather than a simple sip. Astor Wines describes Le Rocher as a rum that "may overwhelm you with a variety of sensations — sweet, savory, briny, smokey, creamy, and bitter all in each sip," with flavors of pineapple, aloe vera, bell pepper, and earthy honey peeking through at different intervals, a finish that is "strikingly long" with potent aromas — "a challenging tasting experience and not for the simple minded or faint hearted." Del Mesa Liquor calls the profile "opulent and singular," with a nose of pine, licorice, straw, and cut grass giving way to a voluptuous, spicy palate of chili pepper, dusty red clay earth, ripe fruit, and butterscotch, closing on an herbaceous, smoky finish of citrus and earth. One RumRatings reviewer, having tasted dozens of clairins, called Le Rocher his second favorite of the entire category — "very grassy and terroir is amazing." This is Haitian rhum agricole in its most unfiltered, most genuinely terroir-driven form. Origins & Craftsmanship Distillerie Le Rocher is located in the village of Pignon, in Haiti's Nord region — one of 532 registered artisanal Clairin distilleries across the country, and one of the most widely respected among them. Owner Bethel Romelus, brother of a priest, named his distillery for the biblical parable of the wise and foolish builders found in Matthew 7:24-27, building his operation directly on the rock the name references. Clairin Le Rocher was first launched in 2017 and has since become one of the most consistently praised expressions in the entire Clairin category — a category defined by small-scale, single-distillery production using entirely traditional Haitian methods, distinct from the larger, more industrial rhum operations found elsewhere in the Caribbean. Production begins with syrup made from the Cristalline sugar cane variety, grown without chemicals in Saint Michel de l'Attalaye and transported to the distillery, where it is diluted to an optimal brix level for completely natural, wild fermentation using the ambient yeast of the region — no commercial or cultured yeast strains are used at any stage. During the notably long fermentation period, dunder from the distillery's previous distillation run is reintroduced into the must, a technique closely related to the "Grand Arôme" tradition that deepens and intensifies the resulting spirit's flavor profile considerably beyond what standard fermentation alone would produce. The fermented wash is distilled in a small, artisanal copper pot still, entirely unfiltered, and bottled without standardized dilution — proof varies naturally from harvest to harvest, reflecting the specific outcome of that year's cane, fermentation, and distillation rather than any adjusted commercial target. The 2022 harvest was bottled at 50.39% ABV. Tasting Profile Nose Clear and translucent in the glass. Vegetal and smoky at first, with pine, licorice, straw, and cut grass leading the aromatic profile. Pineapple, aloe vera, and bell pepper add tropical and slightly funky character, alongside earthy honey. Floral briny olive notes thread through, potent and immediately arresting. Palate Voluptuous and spicy, opening with chili pepper and dusty red clay earth. Ripe fruit and butterscotch add rounded sweetness, balanced against exotic spice, soft vanilla, and sweet coconut. The palate shifts across multiple sensations in a single sip — sweet, savory, briny, smoky, creamy, and bitter all appearing at different intervals, a genuinely complex and challenging profile that rewards close attention. Finish Herbaceous and smoky, with citrus and earthy notes carrying the close. Strikingly long, with very little burn despite the rhum's considerable natural proof — a finish that lingers and continues to reveal new character well after the sip.
