Cinnamon Chips (Cassia)

Warm • Spicy • Aromatic Harvested from the inner bark of the Cinnamomum cassia tree, these cinnamon chips offer a bold, warming spice with a naturally sweet finish. Carefully cut into small pieces, they are ideal for infusions, releasing a rich aroma and deep flavor as they steep. Cassia cinnamon is traditionally harvested during peak seasons in the spring and fall. Once collected, the bark is processed while still fresh and moist, then naturally curls into its signature shape as it dries—locking in its essential oils and potent flavor. Known for its high concentration of natural oils, cassia cinnamon delivers a more robust and pungent profile than typical ground cinnamon, making it perfect for crafting flavorful blends and recipes. Use these chips in chai tea, mulled beverages, and spiced infusions, or incorporate them into pickling blends and culinary creations. For best results, simmer or steep and remove before serving.
