Chocolate Malt

Rich Cocoa Character • Smooth Coffee Roast • Porter & Stout Cornerstone Chocolate Malt is one of brewing's most beloved roasted malts, prized for the rich cocoa, coffee, and smooth roast character it brings to dark beers. Kilned hot enough to develop deep chocolate flavors but short of the acrid edge of black malt, it is the backbone of classic porters and brown ales. With a color rating of 350 °Lovibond, Chocolate Malt delivers deep brown-to-black color in modest doses, and its 28 PPG of extract means it contributes meaningful gravity alongside its defining flavor. Flavor & Aroma Profile Rich chocolate and cocoa character Smooth, dark coffee roast Toasted bread and light char notes Gentle roasted bitterness Deep brown color contribution At low rates, Chocolate Malt adds color and a soft mocha undertone; at higher rates the cocoa and coffee character moves to center stage with a firm but smooth roasted edge — assertive without the burnt harshness of darker malts. Brewing ApplicationsChocolate Malt is a staple ingredient in many classic dark beer styles, including: Robust Porter Brown Ale Sweet Stout Oatmeal Stout Brown Porter Munich Dunkel Dark Mild It is also widely used in small amounts to darken ambers and reds or to round out the roast profile of bigger stouts. Usage RecommendationsDue to its strong flavor contribution, Chocolate Malt is typically used at 3–10% of the total grain bill. Lower percentages provide color and subtle cocoa depth, while higher percentages create the pronounced chocolate-coffee character that defines robust porters. Pair it with crystal malts to balance roast with caramel sweetness, or blend it with roasted barley in stouts for a layered coffee-and-cocoa profile.
