Each Journal has space for 55 entries and measures 6" by 3.75." The Story:  Mark Goldman, a cheese enthusiast, founded Formaticum in 2006 with the idea of providing other fromage fiends a better way to store their favorite wedges at home.  As he says, the packaging "Not only looks good, but protects flavor and allows for proper oxygen exchange, letting cheese breathe. After all, cheese is alive. Let's not suffocate it and let it spoil before we can eat it."  Formaticum works directly with European manufacturers to provide the same quality and materials used by the finest European cheesemakers with an emphasis on being eco-friendly.
