Cheese - Comte 4M

DESCRIPTION On the French border of the Swiss Alps comes this delicious, raw-milk, 90 lb wheel of cheese!  Long ago every bridge in the Alps charged a fixed toll for every box in a wagon.  So farmers starting making bigger wheels to cut costs.  The result were cheeses that had richer, more sophisticated flavors and aged better!  Aged for 4 months, each wheel has a bronze, pebbled rind and delicious, yellow paste inside. Comte is one of France's most famous cheeses.  To learn more about Comte click here!   ORIGIN France   MILK TYPE Cow   RAW MILK OR PASTEURIZED? Raw milk   STORAGE TIPS Refrigerate preferably in its own drawer close to where most of the produce is kept.  After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life.  While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.   PEOPLE WHO PURCHASED THIS ALSO PURCHASED Cheese Plate By Cheese Type - Robiola Bosina and Garrotxa By Origin - Papillon Roquefort and La Bonde d'Antan Pairings - pickled carrots, dried fig cake slice, crackers and roasted walnuts.   SUBSTITUTES Gruyere, Comte Aged or Fontina Val d'Aosta   INGREDIENTS Raw cow milk, lactic starter, salt, rennet (animal)
