Super Strength Chai Tea FlavoringA typical 5-6 gallon batch uses 1-2 drams (0.125-0.25 oz), depending on the flavor and desired intensity. Add the flavor during kegging or bottling, starting with the lower amount and adjusting gradually to taste. Mix gently and sample before treating the entire batch. Flavor Profile and Beverage IdeasChai Tea layers black-tea tannin with cinnamon, cardamom, clove, ginger, and warm spice. Use it in brown ale, porter, milk stout, spiced cider, mead, or dessert wine. A malt-forward or honey-rich base gives the spice blend enough body. Vanilla, caramel, maple, apple, pear, and orange can round the edges.
