Cave-Aged Gruyere

The Story Our Cave Aged Gruyère is crafted using raw cow’s milk and matured in natural alpine caves, where consistent temperature and humidity allow the cheese to develop extraordinary depth. The result is a rich, nutty flavor layered with caramel, toasted hazelnut, and a subtle umami character often described as meaty or beefy. As it ages, the profile becomes more intricate and savory, while the texture evolves into a smooth, firm body with delicate crystalline crunch. This cheese is a celebration of time, tradition, and the unique environment of the caves that shape its unmistakable character. How to Enjoy Essential for fondue and classic French onion soup Melts beautifully for gourmet grilled cheese or paninis Grate over vegetables, eggs, or pasta Slice for cheese boards with nuts, fruit, and charcuterie Behind the Counter Loved by mongers for its meltability and depth, this Gruyère is one of our favorite “workhorse” cheeses — complex enough to savor on its own, and versatile enough to transform any dish.
