Cascahuin Tahona Blanco Tequila

Cascahuín Tahona Blanco Tequila is a traditionally crafted, intensely agave-forward tequila that showcases the historic character of Mexico’s Tequila Valley. Produced at NOM 1123 in El Arenal, Jalisco, it is made from 100% Tequilana Weber Blue Agave and extracted entirely with a traditional tahona stone. Bottled at 42% ABV (84 proof), this unaged expression delivers exceptional concentration of cooked agave, citrus, minerals, herbs, pepper, and savory earthiness with a rich, textured mouthfeel. Process & Profile Cascahuín traces its tequila-making heritage to 1904, with the Rosales family maintaining a strong connection to traditional production at its distillery in El Arenal, Jalisco. The producer describes the Tahona expression as a return to the historic flavors of tequila, specifically designed to emphasize the natural sweetness of Blue Weber agave. The agave is cooked in traditional stone and brick masonry ovens before extraction using 100% tahona milling. The tahona—a heavy stone wheel historically used to crush cooked agave—extracts the juice slowly and contributes to the tequila’s distinctive texture, minerality, and agave concentration. Fermentation takes place open-air in cement tanks with agave fibers, using deep-well water, followed by double distillation in pot still equipment incorporating copper. With no barrel maturation to alter the spirit, the finished tequila remains a direct expression of cooked agave and Cascahuín’s traditional production methods. The nose opens with abundant sweet cooked agave, followed by minerality, black pepper, citrus, earth, fresh vegetation, grass, mint, and subtle saline notes. More detailed tasting impressions reveal touches of orange blossom, sweet potato, citrus leaves, and fresh herbs, creating an aromatic profile that is both rustic and remarkably layered. On the palate, cooked agave remains firmly at the center, joined by Meyer lemon, orange citrus, honeyed sweetness, green olive, fresh-cut grass, green pepper, herbs, and pronounced mineral character. The texture is medium to full, with enough natural viscosity to give the tequila substantial presence while retaining the freshness expected from an unaged blanco. The finish is long, crisp, and mineral-driven, carrying lingering cooked agave, citrus, black and white pepper, mint, saline notes, and subtle vegetal character. A touch of caramelized banana can emerge toward the end, followed by a dry mineral sensation that keeps the finish clean rather than sweet. What makes Cascahuín Tahona Blanco Tequila especially compelling is its combination of 100% tahona extraction, masonry-oven cooking, open-air fermentation with fibers, cement fermentation tanks, and 42% ABV bottling strength. These traditional methods create a tequila that places cooked agave, minerals, earth, and pepper ahead of overly polished sweetness. The expression also received Double Gold at the 2026 Agavos Awards. Enjoy it neat in a tequila or tasting glass to appreciate its full agave and mineral character. It can also be served over a large cube, while its strong citrus, pepper, and herbal profile makes it particularly impressive in a premium Margarita or Paloma.
