Capel Pisco Reservado Chilean Pisco 40% ABV 700ml

The Elqui Valley in Chile's Coquimbo Region is one of the most specifically dramatic and most specifically pisco-defined wine-growing landscapes in the world. At latitudes between 27° and 32° South — the Chilean equivalent of a Mediterranean climate zone — the Elqui sits in a high-altitude desert river valley carved between the Andes and the Pacific, where the Atacama Desert's extreme aridity meets the cold Humboldt Current's maritime moderating influence to produce a growing environment of concentrated intensity. Days are brilliant and hot. Nights are dramatically cool. Humidity is almost non-existent. The grapes that grow here — principally the aromatic Muscat family and its Chilean-native relatives Pedro Jiménez and Torontel — develop exceptional aromatic concentration and natural sugar content that the pisco distillation process then captures with complete fidelity. The Cooperativa Agrícola Pisquera Elqui Limitada — known universally as Capel — was founded in 1931 in Vicuña by a collective of Elqui Valley grape growers who understood that the cooperative model was the most practical and the most equitable way to produce and market the valley's most important agricultural product. Today Capel is Chile's largest pisco producer, representing hundreds of grower-member families whose collective cultivation of the Elqui Valley's most aromatic grape varieties has made the Capel cooperative the most historically grounded and the most community-rooted pisco house in Chile. The Reservado designation identifies the Capel range's most specifically elevated expression: triple filtration rather than the standard double, a grape blend weighted with 70% Pedro Jiménez and Torontel for aromatic depth and 30% Muscat for floral lift, and the specific quality standard that Kara Newman of Wine Enthusiast assessed blind and described as "fruity and a touch smoky on the nose — surprisingly sweet on the tongue — finishing long and fruity with herbaceous and vanilla notes — smooth and sophisticated, excellent value." Tastings.com awarded 88 Points and described "peach pits, proofed dough, mealy yellow apple, and snow peas with a warming medium-length finish of dried apricot, fennel, plantains — clean and pleasantly fruity, a nice and mild introduction to the pisco category." Origins & Craftsmanship The Cooperativa Agrícola Pisquera Elqui Limitada was founded in Vicuña, Coquimbo Region, Chile, in 1931 — the cooperative model established by local growers in the Elqui Valley whose combined production of the valley's most aromatic grape varieties made collective distillation the most economically viable and the most quality-consistent approach to building the Capel brand into Chile's most recognized pisco house. The cooperative today represents hundreds of member families whose vines in the Elqui and Limarí Valleys — the two principal pisco-producing river valleys of northern Chile — collectively produce the Muscat, Pedro Jiménez, and Torontel grapes that the Capel range is built upon. Chilean pisco production is governed by the Denominación de Origen Pisco, which requires production exclusively from specifically defined northern Chilean vineyard areas, from approved aromatic grape varieties, and through distillation and production methods that the Chilean pisco standard specifies. Unlike Peruvian pisco — which prohibits all water addition and wood aging — the Chilean standard permits reduction with demineralized water to the desired bottling proof and allows limited wood contact, giving Chilean producers more latitude in final product character. The Capel Reservado's "Reservado" designation indicates an elevated quality tier within the Capel range, implying a more refined production approach than the standard Capel expression. The grape blend — Muscat, Pedro Jiménez, and Torontel — is the most specifically Chilean and the most specifically aromatic pisco blend available in the Capel range. Muscat (Moscatel) provides the floral, slightly exotic, honeyed aromatic lift that the Elqui Valley's high-altitude desert conditions develop most completely. Pedro Jiménez — the same grape used in the richest Spanish sherries — contributes the sweetest and the most honeyed secondary aromatic dimension. Torontel adds the most specifically citrus-fresh and the most specifically aromatic Chilean quality — a grape variety native to the Chilean pisco tradition whose specific contribution of lemon-citrus freshness and herbal complexity distinguishes Chilean pisco from Peruvian production. Triple filtration removes impurities while preserving the aromatic complexity of the three-grape blend. Critics Reviews Wine Enthusiast (Kara Newman — blind tasting): "The scent reads as fruity and a touch smoky; on the tongue, it's surprisingly sweet, finishing long and fruity, with some herbaceous and vanilla notes on the finish. A smooth and sophisticated pisco, and an excellent value." Tastings.com — 88 Points: "Clear color. Aromas and flavors of peach pits, proofed dough, mealy yellow apple, and snow peas with a satiny, crisp, dry light-to-medium body and a warming, compelling, medium-length finish with notes of dried apricot, fennel, plantains, and breakfast buffet fruit medley. Clean and pleasantly fruity, this is a nice and mild introduction to the pisco category." InternetWines.com confirmed tasting notes: "An aromatic profile combining herbal and fruity notes, followed by a smooth, velvety texture enriched with grape flavors accented by hints of spice, herbs, and pepper." Manila Wine confirmed tasting notes: Nose: "Rich and inviting, featuring notes of ripe fruit such as pear and apple, with subtle hints of vanilla and floral undertones. Delicate notes of citrus and a touch of honey enhance its aromatic complexity." Palate: "Smooth and well-rounded. Flavors of fresh fruit — pear and apple — complemented by a creamy texture and a touch of spice. Nuanced notes of vanilla and almond, with a gentle sweetness." "This pisco is beaming with a harmonious grape bouquet that coalesces with a damp cement minerality and subtle vanilla notes on the nose. On the palate, it is pleasant and true to the luscious fruits from the vine from which it is made." 92 Points, 2022 Ultimate Spirits Challenge Tasting Profile Nose Crystal clear with brilliant luminosity — the triple filtration's most immediately visible contribution in a spirit of complete transparency. The nose opens with the aromatic quality that the Elqui Valley's combination of intense desert sun and cool nights deposits most generously in the three-variety blend: fruity and a touch smoky in the Wine Enthusiast's most concise characterization, with the slightly resinous, slightly warm quality that Muscat and Pedro Jiménez together produce from high-altitude desert-grown grapes. Peach and peach pit add the most specifically and the most memorably stone fruit-adjacent primary note from the Tastings.com tasting. Ripe pear and apple follow with fresh orchard fruit warmth. Floral undertones from the Muscat component add delicate lift. Citrus and a touch of honey add the most specifically Elqui Valley aromatic qualities — the concentrated sweetness of desert-grown aromatic grapes combined with the freshness that the cool nights preserve. Vanilla adds secondary warmth. Snow peas add the most specifically unusual and the most precisely agricultural secondary note from the Tastings.com observation. Herbal undertones from the Torontel grape add the green, slightly herbaceous dimension that distinguishes Chilean pisco aromatics from the more purely fruity Peruvian acholado style. Palate Smooth, velvety, and surprisingly sweet — the Wine Enthusiast's most specifically memorable palate observation confirmed from the first sip. The entry is immediately accessible at 40% ABV — the Chilean pisco style's standard proof producing warmth without aggression. Grape flavors at the forefront — the specific, slightly winey, specifically aromatic quality of triple-filtered Muscat-Pedro Jiménez-Torontel distillate. Fresh fruit — pear and apple — carries through from the nose with the clean, crisp quality of the triple filtration. A creamy texture adds the smoothness that the Reservado designation specifically implies. Spice adds warmth and structure. Nuanced vanilla and almond add the secondary sweetness and nuttiness. Herbs and pepper add the slightly dry, herbal backbone that the Torontel's contribution most specifically provides. The fennel and dried apricot notes from the Tastings.com finish add the most specifically exotic and the most specifically memorable secondary flavors. Plantains add a warm, slightly tropical depth. Finish Long, fruity, and herbaceous-vanilla warmed. The finish is the Capel Reservado's most consistently praised quality across every review: the Wine Enthusiast found it "long and fruity with herbaceous and vanilla notes," Tastings.com found it "warming and compelling with dried apricot, fennel, and plantains." The length and the warmth together confirm that the triple filtration has preserved the aromatic grape complexity without stripping the spirit to neutrality — the specific achievement that the Reservado designation is designed to represent. A gentle sweetness resolves the whole experience into an accessible, pleasant, broadly enjoyable conclusion. Cocktail Suggestions Classic Pisco Sour (the signature Chilean serve) 2 oz Capel Reservado · 1 oz fresh lemon juice · ¾ oz simple syrup · 1 egg white. Shaken vigorously over ice, strained into a chilled coupe. 2-3 drops Angostura bitters on top. The triple-filtered grape complexity and the vanilla finish carry through fresh lemon in the most classic and most culturally authentic Chilean cocktail — the national drink of Chile enjoyed at every level of society and every occasion. Chilcano (Chile's other national cocktail) 2 oz Capel Reservado · ginger ale · fresh lime juice · 2 dashes Angostura bitters · lime wheel. Built over ice in a highball. The ginger ale's spice amplifies the pepper and herbal notes while the aromatic grape character provides the depth that makes a Chilcano genuinely delicious rather than simply refreshing. Piscola 2 oz Capel Reservado · Coca-Cola · lime wedge. Over ice in a tall glass. Chile's most popular everyday serve — the Pisco y Cola that locals call Piscola, whose combination of the Reservado's fruity sweetness and Coca-Cola's caramel is the most simply enjoyable and the most broadly accessible Chilean pisco cocktail available. Capel Paloma 2 oz Capel Reservado · grapefruit soda · lime juice · salt rim. Built over ice in a highball. The Muscat's floral aromatics and the Torontel's citrus freshness align naturally with grapefruit in a Paloma-adjacent serve that showcases the Reservado's most aromatic qualities.
