Calx comes from Fillipo Cassano, owner of the Cantine Polvanera in Puglia, the ‘heel’ of Italy’s boot. Calx, which is the ancient Latin word for limestone, the unique soil in this region which gives Primitivo a singular freshness. This juicy, medium-bodied, organic red is fresh and fun, with notes of zingy red berries and dried figs. Try it with salads, BBQ and grilled veggies, and even salmon. This wine is part of the FUSO project, launched by wine importer PortoVino to select natural, organically farmed, terroir-driven wines. Like all the reds in the FUSO project, it’s great with a slight chill!
