World Spice Calico Fish Rub

World Spice Calico Fish Rub: Bright Sumac & Dill Seasoning for Seafood The World Spice Calico Fish Rub delivers a vibrant, restaurant-quality crust without relying heavily on traditional lemon or vinegar. Formulated as a complete seafood seasoning blend, it combines tart purple sumac, mild red chile, fresh dill weed, toasted black sesame, and balanced sea salt to build flavor while preserving the natural sweetness of the protein. While originally developed specifically for salmon, this rub performs equally well on firm white fish and lean fillets. The fine grind adheres cleanly to wet surfaces, caramelizes gently under high heat, and leaves a subtle crunch that replaces the acidity you’d normally add at the table. Why You’ll Love It Sumac and dill create a tangy, herb-forward profile that lifts rich oils in fatty fish Mild red chile adds warmth without masking delicate flesh flavors Nutty black sesame contributes texture and visual contrast when seared or grilled Pairs naturally with oil, butter, or mayo as a binder for maximum adherence Eliminates the need for pre-cooking citrus soaks or finishing spritzes Best On Salmon fillets and steaks Mahi mahi and halibut Trout, snapper, and cod Grilled or pan-seared fish tacos Pro Tips Toss dry fillets in a light layer of neutral oil before applying to prevent fallout Let the seasoned fish rest for five minutes before cooking to help the spices hydrate and bond Use half a teaspoon per ounce if you prefer a lighter touch on lean white fish Who’s This For? Pitmasters who cook salmon regularly on pellet grills or smokers Home cooks ready to skip complicated brines for weeknight dinners Chefs seeking a consistent, restaurant-style finish on plated seafood FAQ Does this rub contain added sugar or artificial preservatives?
