About the product: Caballito Cerrero Añejo ‘Azul’ is an artisanal, highly sought-after agave spirit made from 100% Blue Weber Agave (Agave Tequilana). Bottled at a higher-than-average proof, it offers a rich, complex profile blending sweet cooked agave with savory, earthy notes. Agave: 100% Agave Tequiliana ABV: 49% | 98 Proof Agave Maturity: Fully mature, single-estate valley Blue Weber agave (often aged up to 9 years) Cooking: Traditional stone/brick steam ovens. Extraction: Double-pass mechanical roller mill. Fermentation: 100% agave juice fermented in open-air stainless steel tanks using spontaneous wild ambient yeasts. Crucially, it is fermented without agave fibers. Distillation: Double distilled. The first pass occurs in a stainless steel pot still, and the second pass in a traditional copper pot still. No Additives: Proudly & strictly additive-free. Age: 13-18 months in ex-bourbon barrels Flavor Profile: The epitome of agave and oak forward.
