BURDOCK (PREORDER)

~20 lbs Burdock aka "Gobo Root", "Burdock Root", "Niu-Bang", "Niu-Bang", "牛蒡" Burdock is a herbal root vegetable that looks like thin wooden spears from the outside with a tough, white inner. Burdock can grow up to four feet in length but rarely more than two inches in diameter. It is crunchy and has a sweet and earthy flavor. Burdock texture is both meaty and slightly crunchy with a pleasant chew. Burdock is commonly used in stews and stir-fry dishes. Burdock is available year-round. Handling Tip Selection Burdock is straight and firm with a uniform light brown color and no signs of blemishes or mold. Thin burdock is preferred over thick burdock because the texture is more tender. Generally, no more than one inch in diameter. Choose burdock with a length between eighteen inches to three feet.  Storage Burdock should be stored at 38°F - 40°F (3°C - 4°C) with a relative humidity of ninety to ninety-eight percent and no mist. The typical shelf life is two to four weeks. Long-term storage may lead to softening and rubbery texture. Burdock is not sensitive to ethylene, a naturally occurring gas that regulates ripening. Burdock produces a low level of ethylene.
