Bread Pot | Sourdough & No-Knead Bread Baker

Ceramic Bread Pot This is where great bread begins. The Emile Henry ceramic bread pot turns your home oven into a true bread oven, giving you the deep, crackling crust and light, open crumb of a bakery loaf, from dough you mixed in a single bowl, with your hands, in your own kitchen. It's the vessel behind the no-knead revolution, reimagined in refractory clay: everything a cast iron Dutch oven does for bread, made lighter, easier, and beautiful enough to bring to the table. Made in France since 1850, it's the one baker to reach for first, and the last one you'll need to buy. Why it bakes a better loaf Great bread is made by steam. Fired from refractory clay with the same properties as a traditional stone bread oven, the bread pot traps the moisture rising from your dough and holds it as steam through the early bake, then lets it evaporate under the domed lid so the loaf sets tender and finishes with a crust that crackles as it cools. The clay holds and radiates heat evenly, the way a hearth does, so your loaf springs high and bakes through without scorching. The result, loaf after loaf: an airy, open interior wrapped in a deep golden, shatter-crisp crust. The ceramic alternative to a cast iron Dutch oven Most no-knead and artisan bread recipes tell you to bake in a heavy Dutch oven. The Emile Henry bread pot does everything that a cast iron pot does for bread, and improves on it. There's no seasoning to maintain and no bare iron to rust. The glazed ceramic is naturally non-reactive, so it never reacts with tangy sourdough or a wet, acidic dough. It's much lighter to lift in and out of a hot oven, the surface releases cleanly, and when you're done it goes straight in the dishwasher. It even doubles as a roasting pot for chicken, vegetables, and braises- one beautiful piece that earns its place in your kitchen. Features Crackling artisan crust- refractory ceramic traps and balances humidity for a deep, crisp, golden crust with real snap. Light, open crumb- steady steam bakes the interior airy and tender, every time. Perfect for no-knead & sourdough- the covered pot is made for the wet, high-hydration doughs that give artisan bread its character; holds a 3–4 cup flour recipe. Lighter than cast iron- easier and safer to handle in and out of a hot oven, with no seasoning ever required. Non-reactive glaze- won't react with sourdough or acidic doughs, and releases cleanly. Bakes and roasts- use it as a covered roasting pot for meats, vegetables, and braises, too. Even heat retention- the thick clay holds and radiates heat like a hearth for a strong, even oven spring. Easy to clean- the glazed exterior is dishwasher safe and, like all Emile Henry ceramics, built to last for years. Recipe book included- tested recipes and tips, from a classic no-knead boule to parmesan rosemary pepper bread. Made in France- crafted in Burgundy from Emile Henry's signature refractory clay. How it works Mix and shape your dough, no kneading required, following the included recipes or your own. Use parchment as a sling to lower the dough into the pot, or flour the base and place it in; cover with the lid. Bake covered for a high, steamy rise, then remove the lid near the end for a deep golden, crackling crust. Frequently asked questions Is a ceramic bread pot better than a Dutch oven? For bread, it does everything a cast iron Dutch oven does, trapping steam for a crisp crust, while being lighter, non-reactive, seasoning-free, and dishwasher safe. Can I bake sourdough in it? Yes. The non-reactive glazed ceramic is ideal for tangy, high-hydration sourdough, and the trapped steam gives it a dramatic, open crumb. Do I need to preheat it? You can preheat the pot and lower in proofed dough, or start it in a cold oven, both work. The included recipes walk you through each. Can I use it for anything besides bread? Yes, it doubles as a covered roasting pot for chicken, vegetables, and braises. View Emile Henry's Bread 101  Click here to download our Bread Baking Recipe Booklet
